Overcomplicated Quiche

I tried to make this quiche, but I broke the rule of keeping food simple. I messed it up pretty bad!

Heres what happened

1) I went to make my own crust and realized I only had whole wheat flour. I wanted to do it half and half, because just whole wheat is pretty gross and to make it worse it was expired. I have never cooked much with whole wheat flour, because this healthy food cooking has only been around for about half a year. Anyone know what happens when flour expires?

I also did not have a rolling pin, so I made use of something every college kid has: alcohol!

2) I decided to roast some veggies in the oven for my quiche. I accidentally roasted them at 425 instead of 400 though and some of them burned and I accidentally put them in the quiche, not paying attention. Gross, taking a bite of egg and burnt shit is no bueno.

I put very little cheese in it to make it healthy, just 1/4 C mozzarella and 1/4 C cheddar. Heres the quiche when I was assembling it:

3) I overcooked it, not by much, but it wasnt as moist as it could have been! In the past I have tried to make 2 quiches, both of which were undercooked =(

4) I also added dried italian herbs and Mrs Dash. Way too much! Next time I will only add a little salt, pepper and nutmeg. I would reccomend only using fresh herbs to anyone thinking of making a quiche

Learn from my mistakes. Quiches can be both healthy and delicious (although never low cal). Packed with protein and veggies, it makes a great vegetarian meal

So now that I’m at school my meals are more boring than ever. So I have decided only to blog about interesting food I eat, or food I cook from now on. One interesting thing I did eat a couple days ago was lemon zucchini pasta:

I added lemon juice and lemon zest to the oil I cooked the zucchini in. However, it was WAY WAY too lemony! I’m gonna make it again some other time. As you can see there is both zucchini and regular pasta in here with a ton of parmesan on top:

This was my first college meal!

For lunch the next day I wilted some spinach and added black beans and cheese! Not too bad tasting!

Everything else I’ve made has been extremely boring. I am also getting back into my gym routine and I am so so so sore! I love it!

As of this morning. For the first time I am relieved to see a high #. My scale @ home  has been telling me I’ve been fluctuating between 136 and 133, but I am really in tune with my body after being so weight obsessive for over a year and found that hard to believe. I’m at college now and this scale looks much nicer and more accurate! Maybe I’ll compare it to the one at the gym sometime to see how accurate it is. That’s the really good news, I have my gym again! I’m about to head there now actually! I have never been inspired bya large # on the scale (for me that is), I’ve only felt guilted by it. Today I feel no guilt, only ready to kick ass!  For the first time I think I actually believe in myself!

Now onto breakfast, since I just moved in and have hardly any food, my breakfast options consisted of string cheese or toast w/pb or toast w/nutella. Hell yes I picked nutella!  I used some Dave’s Killer Bread which is organic and healthy and mmm so grainy!

Dinner/Dessert at Work

So I ate at work tonight, no wonder I can’t lose weight. Tonight I had a poached prawn w/sweet pepper puree, a few roasted cherry tomatoes, a potato roll and a chicken leg. Sounds like a lot of food but really wasn’t. I didn’t eat that all together, just snacked. My main fuel source was a scoop of red wine sorbet and a molten chocolate cake w/NUTELLA ice cream! mmmmmmmmmm…..if anyone actually read my blog they would know that I Love Love Love nutella. Why am I called feminine darcy? That’s way too deep for a simple girl like me. Nutella Whore would be a more accurate name.

I love captain crunch! Love love love it! Almost as much as nutella, which is why when my mom came home with it last night my plans for a healthy breakfast went out the window. I had 2 bowls of captain crunch with fat free milk this morning.

For lunch I went to Whole Foods. It was my first time in one…WOW…it was amazing, why can’t I have one of those at school?! They even have a raw bar! I can’t wait to go back. Next time I think I’ll eat raw, but today I decided to try bulgar since I had never had it. It was okay, chewy and filling, I think I would’ve liked it more in a different sauce. I had that for lunch with some perrier pamplemousse rose, 2 strawberries and half a fortune cookie. Left my camera at my other house =(

But first lets rewind to breakfast:….

The only fresh fruit we had left was bananas. I’m frickin sick of bananas. I decided I wanted pancakes, so I tried to make oatmeal pancakes, but in the mixing process I realized I had no eggs! So I attempted to fix it via a….you guessed it, a frickin banana. Didn’t really work, but I ate it anyway. I used half the banana in the batter and sliced the other one and put it in the middle. Then I added some nutella to make it heavenly along with a glass of milk on the side.

Right before lunch I picked up this kid I babysit to take her to a movie. I planned on waiting to eat till I got home and having canned soup, but when I picked her up her mom had already packed me a bag of organic popcorn and homeade brownies. The popcorn was surprisingly delicious and healthy…can’t say the same health wise about the brownies but they were good. 

Then I ended up getting called into work for pizza making and I decided to bring one home to have with dinner!

Sadly I arrived home to an empty house and had to eat all by my lonesome =(

Got batteries in my camera in the middle of last week. However I immediately afterwards worked about 30 hours in 2 and a half days, so I took pics of my meal before work, but then was too busy for the rest of the weekend. The meal I did have was a raw meal.  My little sister is trying to lose weight and wanted to go on a raw diet. Raw diets suck in case you didn’t know! I don’t believe in them for losing weight, because I feel like the only way to lose weight and keep it off is to change your diet permanently and a raw diet is something I could never fully adopt. I also feel like it doesn’t give you enough protein. However, I have heard it gives you incredible amounts of energy, beautiful skin and helps you focus, so I decided to try it. It failed!!

I did decide to try to adopt more raw meals into my diet though. I have come to the conclusion that I really don’t need more than fruit for breakfast most days. I’ve pretty much been only eating fruit for breakfast for the last week. Works well for me.

Another major problem I had with the raw diet is that the food is friggin expensive if you want to eat more than straight up fruits and veggies. The first meal I had my raw medditerranean wrap (which tasted amazing!) was $6 for a small wrap, $3 for 2 raw cookies my sis and I split and $6 for this raw drink which didn’t taste good at all. In fact, the drink tasted so bad that my sister took a sip and spit it back into the bottle! Sick! She still owes me $5 haha

I went back later and had another raw lunch before work. Unfortunately I was running late and had to eat in the car.

Raw foodists claim you are better at sensing when you are full and not overeating on a raw diet. This is true!
While eating this tart, even though it was amazing I felt satisfied about half way through and didn’t feel like I needed to finish it though. Because I paid so stinking much for it however, I made myself eat it all.

During the weekend I was unable to take pics of what I ate (mainly because I was at work and just snack since I don’t really get a lunch break. Here are two wedding cakes I sampled:

I totally work in the wrong industry to lose weight!

Tonight I ate my very very belated birthday dinner with my family at a restaurant in Seattle called “The Pink Door”. It is in Pike Place Market and has a beautiful view of the sound!

I had been starving when we got there! Probably had eaten no more than 600 calories earlier in the day. We had an appetizer of bread with roasted garlic and I had a few leaves of a fancy caesar salad.

My entree was:

spaghetti w/ fresh artichokes, parsley, garlic & the finest, artisanal olive oil 17

It was very yummy and light! I think I will try to make it at home one day with canned artichokes.

I also had dessert. I tried panna cotta for the first time. It was very refreshing! It was honey lavendar panna cotta with fresh blueberries and raspberries.

Today was a good day!

My camera ran out of batteries and I haven’t been eating at home, I’ve been eating at work and thus not cooking. Hopefully I will get batteries later today and be able to blog more!

I cooked my egg on both sides, but the yolk was still runny and delicious! It was cooked perfectly for me!

3g Fiber (Poor fiber! I never get enough of you!)

Then after breakfast I went and had a cookie and a bite of nutella, because I was craving something sweet. That put my calorie total thus far at 534..eek! But I am totally okay with this because Iam going to my friend Hanna’s house and she hardly eats so I probably won’t have lunch. She’s too lazy to cook and make food, so what she does eat is typically processed or cooked by mom, but she eats so little! If only I were so lazy…

At work I had a few appetizers and then came home and had a yummy chicken fajta on a whole wheat tortilla with a side of mexican rice. I think my dinner was about 800 calories. So I ate about 1500 today! Go me! Now I’m off to go dancing!
